Spinach and Kale Gnocchi with mushrooms and red peppers in a cream sauce
Back before I had a kid, I used to make gnocchi fairly often. This was long before I was vegan, but still, I’ve always been trying to eat less meat. After I had a kid, I guess I decided it was too much work, so it’s been at least 14 years since I’ve had fresh, homemade gnocchi, and I’m kicking myself because it’s so easy and delicious. This stuff is far above the packaged gnocchi that I tend to buy from Trader Joe’s. My gnocchi is light and fluffy!
I dreamt up this recipe as I was running errands the other day, trying to figure out if I needed to stop at the store and what I could make for dinner. It was my first attempt and I’m pretty happy with how it turned out.
Don’t be intimidated by the long list of instructions below. It’s really not that difficult and once you gone through the process, it will be much easier the next time.
Spinach and kale gnocchi with mushroom and red pepper cream sauce
1 hour, 30 minutes
1 lb golden potatoes, quartered
1 ounce baby spinach and kale mix
1 cup flour
1/2 teaspoon salt
Cream sauce with mushrooms and redpeppers:
8 ounces Mushrooms, sliced
1 red pepper, chopped
1/2 an onion, chopped
2 cloves garlic, minced
4 tbsp vegan butter
1 tbsp flour
1 1/4 cup soy milk
A handful of fresh parsley, chopped
Salt and pepper to taste
Bring a pot of water to a boil then add the potatoes. Cook until soft then remove from water with a slotted spoon (save the water). Set aside in a bowl or food processor bowl.
Add greens to the hot water for about 30 seconds
Use the slotted spoon to remove the greens and add to potatoes
Add salt then mash to a lumpy consistency with a potato masher or in the processor.
Add flour and mix until you get a cookie dough consistency.
Roll into a ball then remove chuncks and roll on a lightly floured surface to create a rope, then cut into approximately 1 inch pieces. Continue until all the dough has been used.
Lightly roll the pieces in flour so they aren't sticky
Bring a pot of water to a boil and add gnocchi pieces.
Once gnocchi floats to top cook for about 4 more minutes
Remove gnocchi from water and set aside in a bowl
Add butter to hot skillet
Add the flour and mix to create a paste
Add onions and cook for about 2 minutes, until translucent
Add soy milk and cook until it gets pasty
Add peppers and mushrooms, cook for about 5 minutes,
